Do I need a concrete pump truck for a 5 slump?

I work in the construction industry, dealing exclusively with concrete wall panels, and I'm always surprised at how concrete mix designs are specified. For the most part, you have two things to consider and specify, and that is the slump and the strength. You can have concrete that is so plastic and fluid that it is actually measured in "spread" rather than slump, and this can be concrete that is over 10,000psi, using water reducers...so just because you have a 6 slump mix does not necessarily mean it's not as high psi as say a 4 or 5 slump. Many ready-mix plants don't get too fancy with the design for residential applications, but if you SPECIFY the strength, and tell them you are taking cylinders, they should easily be able to conform to that requirement.

Of course, the aggregate size, type, fibers, etc are all other items that you might specify for other reasons, but if you have the discussion with the ready mix folks that you expect a certain slump at a certain strength, it's their job to make that happen.

Good luck with the pour! I'm getting ready to pour my own 36x56 next week. Trying out a "new" way of doing things with steel fibers and no rebar.
